Overnight Oats!

Can you tell I'm excited about this recipe?

I love Baked Oatmeal (that's a recipe for another day), but on market mornings I don't have 45 minutes to wait for breakfast before I leave. 

 

Thanks to Pinterest, I found a healthy oatmeal that takes ten minutes to prep at night. Then I can grab the jar as I stumble out to the vegetable coolers.

 

 

If you know anything about our family or farm, you know that we're majorly into healthy food. Like, we-have-6-giant-jars-of-different-seeds-in-our-pantry kind of health nuts.  So naturally I was thrilled that this recipe has so many healthy ingredients! 

 

But, the BEST part about this recipe? Totally flexible. 

 

Need to eat gluten free? Use gluten free oats.

Can't do sugar? 1/8 tsp stevia and you're good to go.

No chia seeds? Flax seeds work too. 

 

Not to mention all the yummy fruits and nuts you can mix in.... Local from your farmer's market, hopefully ;)

 

Overnight Oats

Makes 2 pint jars

  • 1 medium ripe banana, mashed

  • 1 1/4 cups milk of choice   

  • 1/2 cup yogurt  or 1/4 cup kefir (add a little extra milk if you're subbing kefir)

  • 1 cup rolled oats

  • 1 tablespoons chia seed

  • Chopped stonefruit or berries

  • Nuts if desired

  • 2-3 Tbsp of honey or 1/8 tsp stevia powder

Add banana, milk and yogurt to a medium bowl and stir until well combined and creamy. Stir in oats, chia seeds and fruit. Divide evenly into two mason jars, then cover and place in fridge overnight.

If you have time in the morning, you can top it with more fruit, nuts, seeds, whatever. 

 

I used a dollop of Smiling Oranges' almond butter and Trevino Family Farm organic raisins (cuz, ya know, I had to).   

 

 

 

Easy enough, right? Now go crazy with it!

 

I will. In fact you'll probably see me chowing down on a jar this Saturday. :)
