Wonderful bar perfect for taking to holiday celebrations. Yummy crust and crumb topping with a deliciously sweet and gooey raisin filling. This dessert is always a hit!
2 c. all purpose flour or gluten free all purpose flour
2 c. oats (regular or gluten free)
1 1/4 c. packed organic brown sugar or coconut sugar
1 tsp. baking soda
1/2 tsp. salt
1 c. butter, softened
1 1/2 c. natural sun dried raisins
3/4 c. organic sugar
3 tbsp. flour (whatever you used above)
1 c. water
Heat oven to 350 degrees. Lightly spoon flour and level off. Mix the first six ingredients at low speed until crumbly. Press 1/2 of mixture into 13x9 ungreased pan. In saucepan, make filling over low heat, stirring occasionally. Cook until thickened. Spread filling over crust. Sprinkle remaining crumbs over top and bake 25-30 minutes. Cool before cutting into bars. Bars also freeze well.
